Beef burgers

Makes 8
Family favourite beef burgers in just eight minutes with Smeg’s ingenious speed oven, utilising the combination of microwave and convection.
500g minced beef
1 onion, finely chopped
1 carrot, finely chopped
2 garlic cloves, finely chopped
½ bunch flat-leaf parsley, finely chopped
1 lemon, zested
1 medium beetroot, peeled
1 medium red onion, peeled
8 medium mushrooms
Salt & pepper
Lettuce, tomato and mozzarella, to serve
Set speed oven to microwave + static + fan and pre-heat to 240⁰C with 400W of microwave power. Line the glass microwave tray with baking paper.
Combine beef, onion, carrot, garlic, parsley, zest, salt and pepper and mix well. Shape into 8 burger patties approximately 2cm thick, and place on prepared tray.
Slice beetroot and onion into eight slices. Top each patty with a slice of beetroot, onion and a mushroom. Cook for 8 minutes.
Serve in slider buns with lettuce, tomato and mozzarella.
