Lamb loin with caponata

With the fan grill function – heat from the grill and the fan – it is possible to cooking three recipes at the same time, with no transference of flavour, for an easy, yet impressive, dinner and dessert.
4 200g lamb loins
3 tablespoons olive oil
3 sprigs rosemary, finely chopped
1 small eggplant, diced
1 medium zucchini, diced
1 small red capsicum, diced
1 small red onion, diced
1 clove garlic
½ cup pine nuts
¼ cup basil leaves
Olive oil
Salt & pepper
Set oven to fan grill and pre-heat to 220⁰C.
Place lamb on baking tray, drizzle with 1 tablespoon olive oil, sprinkle with rosemary and season with salt and pepper.
Place eggplant, zucchini, capsicum, onion and garlic on another tray, toss with remaining olive oil and season with salt and pepper.
Place the lamb tray on the top shelf, the vegetable tray on the middle shelf and the biscuits on the bottom and cook for 12 minutes.
