Roast chicken and vegetables with Taylor Ray

Sydney FC star mid-fielder Taylor Ray joined Italian chef and TV presenter Luca Ciano in the Smeg kitchen to create her signature roast chicken & vegetables. With Smeg Galileo multi-cooking technology, the chicken was succulent and the vegetables golden in just 32 minutes.

Roast chicken & vegetables Serves 4

 

1.3kg whole chicken

2 Spanish onion, quartered

800g desiree potatoes, quartered

400g sweet potato, peeled and 40mm pieces

200g carrots, peeled and 40mm pieces

2 garlic clove - sliced

1 bunch thyme

20ml olive oil

1 teaspoon salt

 

HOW TO SET THE OVEN:

COOKING > MULTITECH > MULTITECH > 240°C > 300 WATTS > 40% STEAM > 32 MINUTES

SMART COOKING > MEAT > CHICKEN & TURKEY > ROAST CHICKEN > 1.3KG

 

1.    Place chicken and vegetables on a baking tray and stuff the chicken cavity with thyme. Drizzle chicken and vegetables with olive oil and season with salt and pepper.

2.   Place the baking tray in a cold oven on shelf level 2 and set the oven program.

3.   Remove from oven and allow chicken to rest for 10 minutes.

4.  Serve chicken with vegetables and pan juices.
