Whipped Goat's Curd and Caramelised Onion Tarts

Ingredients:
Whipped Goat’s Curd
200g goat’s curd
100g mascarpone
Zest of 1 lemon
2 tbsp extra virgin olive oil
Caramelised Onion
3 red onions – finely sliced
1 tbsp extra virgin olive oil
2 tbsp brown sugar
20ml balsamic vinegar
20 X 5cm diameter tart cases
Micro shiso to serve
Method:
1. For the whipped goat’s curd, blend the ingredients in your Smeg Blender until smooth. Season to taste.
2. For the caramelised onions, sweat the finely sliced onion in a pan until soft.
3. Add the sugar and cook for 2 minutes. Deglaze with balsamic vinegar. Season to taste and put aside to cool.
4. To serve, arrange the tart cases on a serving platter. Pipe the goat’s curd mixture into the tarts.
5. Top with the caramelized onion and garnish with micro shiso.
