Christmas Shortbread
INGREDIENTS
250g Butter - room temperature and cubed
3/4 cup of Caster Sugar
1/4 cup of Rice Flour
2 1/4 cup of Plain Flour
Melted chocolate of your choice
METHOD
Cream butter and sugar together until pale.
Stir in sifted rice flour and plain flour.
When mixture becomes stiff, use your hand to combine on a lightly floured surface.
Bring the dough together and wrap in baking paper to place in the fridge for half an hour.
Once cooled, roll the dough between two sheets of baking paper.
Cut into shakes using a cookie cutter and place on a tray lined with baking paper.
Cook in oven for 30 minutes at 150°C.
Cool on trays and decorate with a drizzle of chocolate of your choice.
