Celebrate Lunar New Year and the Year of the Snake with Torciglione, Umbria's iconic spiral-shaped almond cake. Chewy, sweet, and visually striking, it’s the perfect festive treat to share this season! Made with simple yet rich ingredients like almonds, sugar, and egg whites, its texture is delightfully chewy with a hint of sweetness.

Ingredients:

300g ground almonds

125g castor sugar

2x large egg whites

½ tsp vanilla paste

Pinch salt

1 egg beaten to glaze

Method:

1. Preheat oven to 175 degrees Celsius (conventional oven setting)

2. Place the almonds and sugar in a bowl and mix to combine

3. In a separate bowl whisk the egg whites, vanilla and a pinch of salt to soft peaks

4. Fold the egg white mixture through the dry ingredients until it forms a sticky dough

5. Transfer to a lined baking tray and shape the mixture into a snake like shape, pressing to make sure there no cracks in your dough

6. Use a pastry brush and egg mixture to glaze. Use the sliced almonds to decorate.

7. Bake at 175 deg Celsius for 25-30 minutes. When cooked remove from the oven and leave to cool before serving
