Vanilla and Strawberry Jam

Using a Smeg Combi-Microwave oven

500g Strawberries

3g Lemon juice

210g Sugar

1/2 Vanilla pod

 

Cut the strawberries into small pieces and mix with sugar, lemon juice and vanilla.

Place everything in a pyrex glass bowl.

Set the oven in combi-microwave mode at 140°  and 300 w. Bake for about 15 minutes.

Take out the bowl and choose blending for a smooth texture or stir vigorously with a wooden spoon to leave the compote in chunks.

Cool and store in the refrigerator.
